10 Minute Chili Peanut Noodles
Description: This is one of my go-to noodle meals. Takeout has gotten so expensive lately, so I started making it at home for a fraction of the cost. It’s creamy, spicy, full of flavor, and makes plenty for the whole family. Follow to eat better and spend less.
Ingredients
- 9 oz noodles
- 2.5 tbsp peanut butter
- 1 tsp red pepper flakes
- 1/3 cup green onion
- 2 tsp sesame seeds
- 5 garlic cloves, minced
- 1 tbsp sugar
- 1 tbsp chili crisp
- 1 tbsp rice vinegar
- 2 tbsp soy sauce
- 3 tbsp coconut milk
- 1/3 cup avocado oil
- 3 tbsp pasta water
- Green onions, chopped peanuts, julienned cucumbers, chili crisp
Instructions
- Cook your noodles al dente. Rinse under cold water and save some pasta water.
- Add everything except the noodles, oil, and pasta water to a cold pan.
- Heat the avocado oil until very hot.
- Carefully pour the hot oil over the sauce ingredients and stir until smooth.
- Add the noodles and toss until everything is coated.
- Add the pasta water if needed and mix until the sauce turns glossy and silky.
- Garnish with green onions, chopped peanuts, julienned cucumbers, and more chili crisp.
