5-Minute Lemon Lamb Roast

Ingredients
- 1kg leg of lamb
- Olive oil
- Salt
- Pepper
- Mixed dried herbs (oregano, thyme, rosemary)
- 2 bulbs garlic (sliced in half skin on)
- 2 onions (sliced in half skin on)
- 500ml stock
- 2 lemons
Instructions
- Pre-heat oven to 200C.
- Rub the leg of lamb all over with olive oil, salt, pepper, and mixed dried herbs.
- Place the lamb in the oven with the halved garlic bulbs and halved onions.
- Cook for 30 minutes.
- Remove from oven, add 500ml of stock, and cover tightly with foil.
- Reduce oven temperature to 150C.
- Cook for 3.5 hours.
- Remove from oven and remove the foil.
- Slice the lemons in half, squeeze the juice over the lamb, and throw in the skins.
- Cook for a final 30 minutes uncovered.
- Remove from oven, shred, and enjoy.
