  1. Pre-heat oven to 200C.
  2. Rub the leg of lamb all over with olive oil, salt, pepper, and mixed dried herbs.
  3. Place the lamb in the oven with the halved garlic bulbs and halved onions.
  4. Cook for 30 minutes.
  5. Remove from oven, add 500ml of stock, and cover tightly with foil.
  6. Reduce oven temperature to 150C.
  7. Cook for 3.5 hours.
  8. Remove from oven and remove the foil.
  9. Slice the lemons in half, squeeze the juice over the lamb, and throw in the skins.
  10. Cook for a final 30 minutes uncovered.
  11. Remove from oven, shred, and enjoy.
