  1. The simplest latkes in the world, to which you can add olives, corn, green onions, or even halloumi cheese - but even as they are, they are wonderful. Try them on Hanukkah, and adopt them for other days too. Our word.
  2. Just like most dishes from the beloved Orna & Ella restaurant, sweet potato latkes also require more work than it seems, and we are less of the "more work than it seems" type. So what do we do? We go for other sweet potato latkes (with mozzarella inside!), which take no more than half an hour to prepare (not including frying), and they are soft as a dream, sweet, and explosively delicious.
  3. What do you and kohlrabi have to do with each other, you ask? Well, first of all, shame on you, go to the corner. This is a delicious vegetable in its deliciousness - in its fresh, roasted, and even pickled versions (especially pickled!) - and if you give it a chance, you will understand this yourself. Secondly, these are potato and kohlrabi latkes, so there is no need to be afraid of being stuck alone with kohlrabi in a dark room.
  4. Potato latkes are the standard for this holiday, but not in the mashed potato version. This recipe is worth deviating from the standard, not only because fried mashed potatoes are among the most indulgent foods, but also because inside each latke hides - hush, lest you awaken - a slice of mozzarella cheese, which melts during frying and makes the bite particularly deadly.
  5. Another one of the less conventional ones, but classic for a year when Hanukkah starts at the beginning of the week, when in many homes there is still half a challah lying on the counter as if it has no purpose. Besides challah, there are cheeses, olives, and seasoning of thyme, oregano, and garlic powder, so whoever expects French toast should know that this is a completely different story.
  6. Those who reached the end get a bonus from us: really healthy latkes, but also really delicious, which don't necessarily scream "Hanukkah" but are still latkes for all intents and purposes. Besides spinach (frozen and thawed), they contain oats, mild Bulgarian cheese, and garlic, and if you want to bake them instead of frying, we'll tell you that's enough, you've completely overdone it.
