Altoran Musaengchae Recipe: Golden Recipe for Radish Salad

Ingredients
- Radish, 500g
- Coarse sea salt, 0.7 Tbsp
- Gochugaru (Korean chili flakes), 1 Tbsp
- Sugar, 1 Tbsp
- Minced garlic, 1 Tbsp
- Green onion, 30g, thinly sliced
- Ginger juice, 1 tsp
- Saeujeot (fermented shrimp), 0.5 Tbsp, mashed
- Sesame oil, 1 Tbsp
- Toasted sesame seeds, 1 Tbsp
Instructions
- Peel the radish and cut it into long strips along the grain. This helps maintain its crispness.
- Cut the radish strips into manageable pieces, not too thick since we are not salting and letting it sit.
- In a bowl, combine the radish with 0.7 Tbsp of coarse sea salt. Mix well to lightly season the radish. This is not for wilting, but for initial seasoning.
- Add 1 Tbsp of gochugaru and mix to color the radish.
- Add 1 Tbsp of sugar and mix.
- Add 1 Tbsp of minced garlic and 1 tsp of ginger juice. (Alternatively, you can finely mince ginger and squeeze the juice out by hand).
- Add the thinly sliced green onion.
- Add 0.5 Tbsp of mashed saeujeot (fermented shrimp). Adjust the amount of saeujeot based on your preference and taste.
- Add 1 Tbsp of toasted sesame seeds and 1 Tbsp of sesame oil.
- Mix everything together until well combined.
- The musaengchae is ready to serve. It can be enjoyed immediately.
