Ingredients
- 2 tbsp. olive oil
- 1 yellow onion, diced
- 2 tsp. each: curry powder, paprika, cumin
- salt & pepper to taste
- 1 lb. ground lamb
- 3 tbsp. tomato paste
- 1 cup Greek yogurt
- 4 garlic cloves, minced
- pinch of salt
- juice from half a lemon
- 4 tbsp. butter
- 1 tbsp. paprika
- pinch of salt
- 1 lb. cooked pasta
- sliced cherry tomatoes, feta cheese crumbles, & chopped parsley
Instructions
- Prepare the meat sauce: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in curry powder, paprika, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
- Add ground lamb to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Stir in tomato paste and cook for 1-2 minutes, stirring to coat the lamb.
- Prepare the garlic yogurt: In a small bowl, combine Greek yogurt, minced garlic, salt, and lemon juice. Stir well.
- Prepare the paprika butter: In a small saucepan, melt butter over low heat. Stir in paprika and a pinch of salt.
- Assemble the dish: Add the cooked pasta to the skillet with the meat sauce. Stir to combine and heat through.
- Serve the pasta topped with the garlic yogurt, paprika butter, sliced cherry tomatoes, feta cheese crumbles, and chopped parsley.
