  2. Prepare the kale: Wash and de-stem the kale. Chop the kale leaves into bite-sized pieces. If the kale is tough, you can massage it with a little olive oil for a minute or two to soften it.
  3. Prepare the apple: Core and chop the apple into bite-sized pieces. If you are concerned about browning, toss the apple pieces with 1/2 teaspoon of lemon juice.
  4. Assemble the salad: In a large bowl, combine the chopped kale, chopped apple, raisins, and chopped walnuts.

  7. Portion the salad: Divide the salad into four meal prep containers. If packing the dressing separately, use small containers or bags for the dressing.
  8. Chill and serve: Refrigerate the meal prep containers. The salad can be eaten cold directly from the container.
