Asian Chopped Chicken Salad with Spicy Candied Nuts

Ingredients
- 1 bag Fresh Express Asian Chopped Kit
- 3/4 cup shelled edamame
- 3/4 cup mandarins (from can, drained)
- 1 bunch green onions, sliced
- 1 cup shredded rotisserie chicken
- 3/4 cup sliced almonds
- 3/4 cup raw cashews
- 1/4 cup pumpkin seeds
- 2 tbsp sesame seeds
- 3 tbsp maple syrup
- 2 tbsp coconut oil, melted
- 1 tbsp coconut sugar
- 2 tsp smoked paprika
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Instructions
- Preheat oven to 375F.
- In a small bowl, mix together the nuts and seeds, along with maple syrup, melted coconut oil, coconut sugar and spices.
- Spread in an even layer on a parchment-lined baking sheet.
- Bake for 7 minutes, then toss and bake for 4 minutes more.
- Remove from oven and transfer nuts to another parchment-lined baking sheet to cool and harden.
- Next, in a large bowl, add the Fresh Express Asian Chopped Kit, along with edamame, mandarins, green onions and chicken.
- Top with the candied nuts.
- Pour dressing on top, toss and enjoy.
