Ingredients
- 1 lb of thin top round steak
- 1/4 cup olive oil
- Juice of 1 lime
- Juice of 1 orange or 1/4 cup orange juice
- 1 garlic clove, finely chopped
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- Handful of Fresh Cilantro, chopped
- 2 cans of sweet corn, drained
- 1/2 red bell pepper, diced
- 1/2 poblano chile, diced
- Juice of 1/2 lime
- Chile Crema (recipe below)
- Handful of cilantro, chopped
- 1/2 cup cotija cheese
- 1/4 cup mayo
- 1/4 cup Mexican cream or sour cream
- 1 tsp chipotles in adobo
- 1 tsp garlic powder
- 1/4 paprika
- Juice of 1/2 lime
Instructions
- Marinate steak for a minimum 30 min.
- Sear for 1-2 min on each side.
- Let it rest for 5 min.
- Slice against the grain and in chunks with the grain.
- Heat corn & peppers until charred.
- Set aside and cool slightly.
- Add rest of the ingredients and mix thoroughly.
- Combine Chile Crema ingredients and mix thoroughly.
