  1. Heat olive oil in a pan.
  2. Add diced red onion and green chili and cook until softened.
  3. Add chopped bell peppers and tomatoes, and cook for 2-3 minutes.
  4. Add salt, black pepper, turmeric, coriander powder, paprika, and garam masala. Cook for 1 minute.
  5. Whisk 3 eggs with a pinch of salt and pepper.
  6. Pour the eggs over the vegetables in the pan.
  7. Cook until the eggs are almost set.
  8. Place two halves of a bagel on top of the egg mixture.
  9. Flip the entire mixture over to cook the bagels.
  10. Add a slice of gouda cheese on top of one bagel half.
  11. Flip the other bagel half on top to create a sandwich.
  12. Trim off any excess egg mixture hanging from the sides.
  13. Serve and enjoy.
