Baked Chicken Breast with Tomatoes and Mozzarella

Ingredients
- 3 chicken breasts
- toothpicks
- 1/2 cup olive oil
- 1/4 cup soy sauce
- 2 cups beer
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 cloves garlic
- 2 red onions, sliced
- 3 tomatoes, sliced
- 200g shredded mozzarella cheese
Instructions
- Preheat oven to 350°F (175°C).
- Prepare chicken breasts by piercing them all over with toothpicks.
- Slice the red onions and tomatoes.
- In a bowl, whisk together olive oil, soy sauce, beer, brown sugar, oregano, rosemary, black pepper, salt, and minced garlic.
- Arrange the sliced onions and tomatoes in the bottom of a baking dish.
- Place the chicken breasts on top of the onions and tomatoes.
- Pour the marinade over the chicken, ensuring it covers the breasts.
- Cover the baking dish with plastic wrap and let it marinate for 10 minutes.
- Remove the plastic wrap and sprinkle shredded mozzarella cheese over the chicken breasts.
- Bake for 40 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
- Remove toothpicks before serving.
