  1. Preheat oven to 350°F (175°C).
  2. Prepare chicken breasts by piercing them all over with toothpicks.
  3. Slice the red onions and tomatoes.
  4. In a bowl, whisk together olive oil, soy sauce, beer, brown sugar, oregano, rosemary, black pepper, salt, and minced garlic.
  5. Arrange the sliced onions and tomatoes in the bottom of a baking dish.
  6. Place the chicken breasts on top of the onions and tomatoes.
  7. Pour the marinade over the chicken, ensuring it covers the breasts.
  8. Cover the baking dish with plastic wrap and let it marinate for 10 minutes.
  9. Remove the plastic wrap and sprinkle shredded mozzarella cheese over the chicken breasts.
  10. Bake for 40 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
  11. Remove toothpicks before serving.
