BBQ Chicken Potato Skillet
Description: This is an easy 30 minute dinner the whole family loves!
Ingredients
- 2 chicken breasts
- 5 small/medium potatoes
- olive oil + salt, pepper, garlic powder, and paprika (for potatoes)
- 1/2 tsp each of salt and pepper
- 1 tsp each of paprika, ranch seasoning, and onion powder
- 2 TBSP butter
- 1 TBSP minced garlic
- 1/2 cup of BBQ sauce
- 1 cup of shredded mozzarella cheese
Instructions
- Peel, wash potatoes, and cut up into cubes.
- Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).
- Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
- Once potatoes are cooking, cut chicken into cubes. Cook chicken in a skillet on medium high heat with a little butter.
- Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, ranch seasoning, and onion powder. Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce.
- Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese.
- Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).
- Top with a little bit more BBQ sauce and enjoy!
