  1. Crush 220g Lotus biscuits finely and pour into a bowl. Set aside 2 tbsp.
  2. Mix with 60g melted unsalted butter until combined.
  3. Press down firmly into a baking tray lined with parchment paper.
  4. Whisk together 500g cream cheese, 150g Biscoff spread, and 100g icing sugar until combined.
  5. Scoop the filling onto the base and smooth it out.
  6. Pour 200g melted Biscoff spread over the filling and smooth it out.
  7. Sprinkle with the remaining biscuit crumbs around the edge.
  8. Place a biscuit in the middle.
  9. Refrigerate for 3 hours minimum.
  10. Slice into squares and enjoy!
