Biscoff Cheesecake Bars

Ingredients
- 220g Lotus biscuits
- 60g unsalted butter, melted
- 500g cream cheese, room temp
- 150g Biscoff spread
- 100g icing sugar
- 200g Biscoff spread, melted
- Remaining Biscoff crumbs
- 1 Biscoff biscuit
Instructions
- Crush 220g Lotus biscuits finely and pour into a bowl. Set aside 2 tbsp.
- Mix with 60g melted unsalted butter until combined.
- Press down firmly into a baking tray lined with parchment paper.
- Whisk together 500g cream cheese, 150g Biscoff spread, and 100g icing sugar until combined.
- Scoop the filling onto the base and smooth it out.
- Pour 200g melted Biscoff spread over the filling and smooth it out.
- Sprinkle with the remaining biscuit crumbs around the edge.
- Place a biscuit in the middle.
- Refrigerate for 3 hours minimum.
- Slice into squares and enjoy!
