Bottle Gourd Kofta Curry with Roti and Raita

  1. Peel and grate the bottle gourd. Squeeze out all the excess water.
  2. In a bowl, mix the grated bottle gourd with besan, salt, turmeric, chili powder, and coriander powder. Form small balls and deep fry them until golden brown.
  3. Heat mustard oil in a pan. Add cumin seeds and let them splutter. Add ginger garlic paste and sauté for a minute.
  4. Add chopped tomatoes and cook until they soften. Add turmeric, chili powder, coriander powder, garam masala, and salt. Cook until the oil separates from the masala.
  5. Add water and bring it to a boil. Add the fried bottle gourd koftas and simmer for 5-7 minutes. Garnish with cilantro.
  6. To make roti, mix wheat flour, salt, and water to form a dough. Roll out small rotis and cook them on a hot tawa with some oil or ghee.
  7. To make raita, mix curd with chopped cucumber, onion, cilantro, salt, and cumin powder.
  8. Serve the kofta curry with roti and raita.
