Bottle Gourd Kofta Curry with Roti and Raita

Ingredients
- 1 bottle of mustard oil
- 1 tsp turmeric
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp chili powder
- 1 tsp garam masala
- 1 tsp salt
- 1 tsp ginger garlic paste
- 1 bottle of bottle gourd
- 1 cup besan (chickpea flour)
- 3-4 tomatoes
- 1 onion
- 1 cup water
- 1 cup curd
- chopped cilantro for garnish
- 2 cups wheat flour
- 1 cup water
- 1 tsp salt
- 2 tbsp oil
- 1 cup curd
- 1/2 cup chopped cucumber
- 1/2 cup chopped onion
- 1/4 cup chopped cilantro
- 1/2 tsp salt
- 1/4 tsp cumin powder
Instructions
- Peel and grate the bottle gourd. Squeeze out all the excess water.
- In a bowl, mix the grated bottle gourd with besan, salt, turmeric, chili powder, and coriander powder. Form small balls and deep fry them until golden brown.
- Heat mustard oil in a pan. Add cumin seeds and let them splutter. Add ginger garlic paste and sauté for a minute.
- Add chopped tomatoes and cook until they soften. Add turmeric, chili powder, coriander powder, garam masala, and salt. Cook until the oil separates from the masala.
- Add water and bring it to a boil. Add the fried bottle gourd koftas and simmer for 5-7 minutes. Garnish with cilantro.
- To make roti, mix wheat flour, salt, and water to form a dough. Roll out small rotis and cook them on a hot tawa with some oil or ghee.
- To make raita, mix curd with chopped cucumber, onion, cilantro, salt, and cumin powder.
- Serve the kofta curry with roti and raita.
