Boursin Sausage & Veg Orzo
Description: One pot orzo with sausage and vegetables. It's creamy, flavorful, and quick to make, perfect for busy weeknights. Packed with veggies and protein, this dish is a family favorite, including for kids.
Ingredients
- 2 cups dry orzo
- 1 pack already cooked chicken sausage (4 sausages)
- 1 zucchini
- 1 pint of cherry tomatoes
- 1 garlic & herb Boursin cheese
- 2 cups chicken bone broth
- 1-2 cups water
- Salt, pepper & garlic powder
Instructions
- Slice sausage into thin rounds.
- Dice zucchini & slice cherry tomatoes in half.
- In a large pot add a splash of oil, chicken sausage and veggies.
- Season with salt, pepper & garlic powder, stir cooking for 5 minutes until veggies soften.
- Push veggies and sausage to the side & add Boursin cheese, orzo & broth.
- Cover and let simmer for 10 minutes.
- Remove cover & add 1 cup of water, stir until cheese melts & continue cooking for another 5 minutes while it thickens & water has been absorbed. Add another splash of water if it becomes too thick. Remove from heat once orzo is cooked through.
- Serve and enjoy (chili flakes are a perfect garnish with a touch of spice).
- To reheat leftovers add a splash of water or broth.
