Boursin Sausage & Veg Orzo

  1. Slice sausage into thin rounds.
  2. Dice zucchini & slice cherry tomatoes in half.
  3. In a large pot add a splash of oil, chicken sausage and veggies.
  4. Season with salt, pepper & garlic powder, stir cooking for 5 minutes until veggies soften.
  5. Push veggies and sausage to the side & add Boursin cheese, orzo & broth.
  6. Cover and let simmer for 10 minutes.
  7. Remove cover & add 1 cup of water, stir until cheese melts & continue cooking for another 5 minutes while it thickens & water has been absorbed. Add another splash of water if it becomes too thick. Remove from heat once orzo is cooked through.
  8. Serve and enjoy (chili flakes are a perfect garnish with a touch of spice).
  9. To reheat leftovers add a splash of water or broth.
