Broccoli Pasta
Description: Quick and easy broccoli pasta with garlic and chili.
Ingredients
- 1 kg broccoli
- 3 cloves garlic
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- 250 g farfalle pasta
- 100 g grated Parmesan cheese
- 100 ml pasta water
- 2 tablespoons mascarpone cheese
- fresh basil leaves
- salt
- pepper
Instructions
- Cut the broccoli into florets and the stems into small pieces.
- Cook the broccoli in boiling salted water for about 5 minutes.
- Reserve some broccoli water and drain the rest.
- Finely chop the garlic.
- Heat olive oil in a pan over medium heat.
- Add garlic and red pepper flakes and sauté for about 1 minute until fragrant.
- Add the cooked broccoli to the pan and sauté for 2-3 minutes.
- Add the cooked farfalle pasta, grated Parmesan cheese, and mascarpone cheese.
- Add some reserved pasta water and stir until the sauce is creamy.
- Season with salt and pepper to taste.
- Garnish with fresh basil leaves.
