Butter Bean & Leek Gratin

Ingredients
- 2 leeks, sliced
- 1 tin butter beans, drained
- 3 tbsp plain flour
- 1 cup milk
- 1 handful grated cheddar cheese
Instructions
- Preheat oven to 180 degrees C fan.
- Add leeks to a frying pan with a little oil on a medium heat and fry until starting to colour.
- Add the flour and stir until combined.
- Add the milk and stir to absorb all the flour, allowing the sauce to thicken for a minute.
- Turn off the heat and add the butter beans and cheese. Mix thoroughly. Season if desired.
- Spoon the mixture into an ovenproof dish and bake for 30 minutes.
- Remove from oven and serve.
