  1. Preheat oven to 180 degrees C fan.
  2. Add leeks to a frying pan with a little oil on a medium heat and fry until starting to colour.
  3. Add the flour and stir until combined.
  4. Add the milk and stir to absorb all the flour, allowing the sauce to thicken for a minute.
  5. Turn off the heat and add the butter beans and cheese. Mix thoroughly. Season if desired.
  6. Spoon the mixture into an ovenproof dish and bake for 30 minutes.
  7. Remove from oven and serve.
