Ca Sot Ca Chua | Fish in Tomatoe Sauce (Salmon)
Description: Salmon filets cooked in a flavorful tomato sauce with shallots, garlic, and seasonings.
Ingredients
- 4 salmon filets (about ½ lb total)
- Salt
- Black pepper
- Garlic powder
- Paprika
- Olive oil
- 1 shallot, diced
- 1 TBSP minced garlic
- 7 roma tomatoes, chopped (can sub with canned crushed tomatoes)
- ½ tsp chicken bouillon
- 1 tsp sugar
- ½ tsp fish sauce
- Chopped scallion, garnish
- Chopped cilantro, garnish
- Thinly sliced onions, garnish
Instructions
- Season salmon filets with salt, black pepper, garlic powder, and paprika.
- Heat olive oil in a skillet over medium-high heat. Sear salmon filets on both sides until cooked through.
- Remove salmon from skillet and set aside.
- In the same skillet, add diced shallot and cook until softened.
- Add minced garlic and cook for another minute until fragrant.
- Add chopped roma tomatoes (or crushed tomatoes), chicken bouillon, sugar, and fish sauce.
- Simmer the sauce for 5-10 minutes, or until it has thickened slightly.
- Return the salmon filets to the skillet and spoon the tomato sauce over them.
- Cook for another 2-3 minutes to heat the salmon through.
- Serve hot, garnished with chopped scallions, cilantro, and thinly sliced onions.
