  1. Season salmon filets with salt, black pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear salmon filets on both sides until cooked through.
  3. Remove salmon from skillet and set aside.
  4. In the same skillet, add diced shallot and cook until softened.
  5. Add minced garlic and cook for another minute until fragrant.
  6. Add chopped roma tomatoes (or crushed tomatoes), chicken bouillon, sugar, and fish sauce.
  7. Simmer the sauce for 5-10 minutes, or until it has thickened slightly.
  8. Return the salmon filets to the skillet and spoon the tomato sauce over them.
  9. Cook for another 2-3 minutes to heat the salmon through.
  10. Serve hot, garnished with chopped scallions, cilantro, and thinly sliced onions.
