Cauliflower Parmesan

Ingredients
- 1 head of cauliflower
- 2 tablespoons olive oil
- 100g breadcrumbs
- Salt and pepper to taste
- 150g tomato sauce
- 100g shredded mozzarella cheese
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
- Wash the cauliflower and slice it into 1-inch thick "steaks".
- In a bowl, toss the cauliflower steaks with olive oil, salt, and pepper.
- In a separate bowl, add the breadcrumbs.
- Dip each cauliflower steak into the breadcrumbs, ensuring it's fully coated.
- Place the breaded cauliflower steaks on the prepared baking tray.
- Bake for 20-25 minutes, or until the cauliflower is tender and the breadcrumbs are golden brown.
- Remove the tray from the oven. Spoon tomato sauce over each cauliflower steak.
- Sprinkle shredded mozzarella cheese on top of the tomato sauce.
- Return the tray to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh chopped parsley before serving.
