  1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Wash the cauliflower and slice it into 1-inch thick "steaks".
  3. In a bowl, toss the cauliflower steaks with olive oil, salt, and pepper.
  4. In a separate bowl, add the breadcrumbs.
  5. Dip each cauliflower steak into the breadcrumbs, ensuring it's fully coated.
  6. Place the breaded cauliflower steaks on the prepared baking tray.
  7. Bake for 20-25 minutes, or until the cauliflower is tender and the breadcrumbs are golden brown.
  8. Remove the tray from the oven. Spoon tomato sauce over each cauliflower steak.
  9. Sprinkle shredded mozzarella cheese on top of the tomato sauce.
  10. Return the tray to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  11. Garnish with fresh chopped parsley before serving.
