Cheesy Broccoli Pasta

Ingredients
- 2 cups short pasta
- 2.5 cups chopped broccoli
- Olive oil
- 1 tbsp butter
- 1 onion
- 4 cloves garlic
- 1 cup cream
- 1 cup mozzarella
- 1 cup Parmesan
- 1/4 cup reserved pasta water
- 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
Instructions
- Cook pasta according to package directions. Reserve 1/4 cup of pasta water before draining.
- While pasta is cooking, heat olive oil and butter in a large skillet over medium heat.
- Add chopped onion and sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add chopped broccoli to the skillet and cook until tender-crisp, about 5-7 minutes.
- Pour in the cream and bring to a gentle simmer.
- Stir in mozzarella and Parmesan cheese until melted and the sauce is smooth.
- Add the cooked pasta to the skillet with the sauce.
- Add the reserved pasta water, salt, smoked paprika, and black pepper. Toss everything together until well combined and the pasta is coated in the cheesy sauce.
- Serve immediately.
