Cheesy Potato Pancake

Ingredients
- 2 potatoes (500gr)
- 6-10 tbsp cornstarch (add more if the dough is too sticky)
- Salt & Pepper
- Mozzarella cheese
- Oil (for frying)
Instructions
- Wash, peel, and cut the potatoes.
- Boil the potatoes until soft.
- Mash the potatoes (using hands, chopper, or blender for a smoother texture).
- Add salt, pepper, and cornstarch to the mashed potatoes. Mix until fully combined.
- Shape the potato mixture into pancakes.
- Fill the center of each pancake generously with mozzarella cheese.
- Heat oil in a pan.
- Pan-fry the stuffed potato pancakes until browned on both sides and the cheese is melted.
- Enjoy while hot.
