Chicken Katsu Hack
Description: Use this chicken katsu hack to make a large batch for easy weeknight dinners.
Ingredients
- Chicken breast or chicken tenderloin
- All purpose flour
- Eggs
- Panko bread crumbs
- Salt and pepper to taste
- Oil for cooking
- Golden Curry (follow box instructions)
Instructions
- Using a mallet, flatten your chicken breast or tenderloin. I like to put mine in a Ziploc bag to prevent any chicken juices from splashing/ squirting.
- Set up 3 stations: 1st) all purpose flour 2) eggs- whisked 3) panko bread crumbs. Season station 1 and 2 with salt and black pepper.
- Coat flatten chicken tenderloin in all purpose flour, eggs and panko bread crumbs.
- I make a lot cause this freezes well. If you are going to freeze, I recommend putting parchment paper in between each tenderloin and then into a Ziploc bag. I freeze it laying flat. Once it’s a little frozen and there is some structure, I reposition it so it freezes standing up… but this is all preference. I freeze 5-6 tenderloin per bag because that’s how my family and I eat per serving.
- To make the curry, I follow the instructions on the box.
