Chicken Katsu Smashed Tacos
Description: Chicken katsu smashed tacos are an easy weeknight dinner, ready in 20 minutes.
Ingredients
- 6 tortillas
- 1 egg, lightly beaten
- 1 cup panko breadcrumbs
- 1 spring onion, finely chopped
- Tonkatsu sauce, to drizzle
- Olive oil, for frying
- Sesame seeds, to sprinkle
- 500g chicken mince
- 2 tbsp curry powder
- 1 tbsp soy sauce
- 1 tbsp sriracha (optional)
- 1 tsp ginger
- 1 tsp garlic
- 1/2 Chinese cabbage, finely chopped
- 2 tbsp kewpie mayo
- 2 tbsp rice wine vinegar
- 1 tbsp honey
- 1 tbsp soy sauce
Instructions
- Mix together ingredients for chicken filling until well combined.
- Spread an even, thin layer of the chicken filling on each tortilla, leaving a 1cm border around the edges.
- Brush the chicken side with beaten egg then sprinkle with panko breadcrumbs, dusting off excess.
- Generously drizzle olive oil into a frypan and place over medium heat.
- Once hot, place the tortilla, chicken-side down into the pan.
- Cook for 3-4 minutes or until golden brown.
- Flip the tortilla and cook for another 2-3 minutes.
- For the slaw, place all ingredients in a bowl and toss well.
- Assemble tacos by topping with slaw, spring onion, tonkatsu sauce, and sesame seeds.
