Chocolate Logcake with Bulla Dairy

Ingredients
- 55g cake flour
- 15g cocoa powder
- 5 eggs
- 70g fresh milk
- 55g oil
- 55g caster sugar
- 2g lemon juice
- 300-400ml Bulla Double Cream
- 300ml Bulla thickened cream
- 250g dark chocolate
- 20g unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Mix yolk, milk & oil
- Add sifted flour & cocoa powder
- Mix into batter
- Whip whites with lemon juice & sugar till stiff peaks
- Fold meringue into cocoa batter
- Pour batter into baking tray & bake at 180C for 17-18 mins
- Remove cake from tray, roll up the cake & let it cool for about 30 mins
- Unroll the cake, spread 300-400 ml Bulla double cream onto cake. Roll up & chill for 1-2hrs.
- Add dark chocolate, unsalted butter, vanilla & salt to bowl.
- Add Bulla thickened cream to pot, bring to simmer
- Pour hot cream into chocolate. Let mixture sit for 5 mins, stir till mixture thickens. Chill for 1hr.
- Remove roll cake, slice 1/4 of cake diagonally and arrange into log
- Pipe chocolate ganache onto log cake. Use fork to make tree bark pattern. Sprinkle icing sugar
