Chopped Broccoli & Chickpea Salad
Description: This chopped broccoli and chickpea salad is packed with flavor, fiber and plant-based protein. Serve it on its own, or pile it high on whole-wheat pitas.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 cups finely chopped broccoli florets (from about 1/4 medium head)
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/4 cup chopped bell pepper (any color)
- 1/4 cup chopped cucumber
- 2 tablespoons chopped roasted red peppers (from a jar)
- Whole-wheat pita bread, for serving (optional)
Instructions
- Whisk together olive oil, red onion, parsley, dill, lemon juice, Dijon mustard, salt and pepper in a large bowl.
- Add broccoli, chickpeas, bell pepper, cucumber and roasted red peppers. Toss to combine.
- Serve on its own or on whole-wheat pita bread, if desired.
