  1. In a large bowl, combine ground almonds, protein powder, peanut butter, and maple syrup. Mix until a dough forms.
  2. Press the dough into a mini muffin tin or silicone mold, filling each cup about halfway.
  3. Flatten the top of each dough ball with a spoon or your fingers.
  4. Melt the dark chocolate chips and pour a thin layer over the top of each cookie dough bar.
  5. Place in the refrigerator or freezer until firm. Enjoy!
