  1. In a large frying pan, fry the halloumi in a little oil until golden and crispy. Scoop out and set aside.
  2. In the same pan, add the courgette and sauté for a few minutes on high until starting to colour.
  3. Add the orzo and 500ml boiling water to the pan with the courgette. Turn the heat down to low.
  4. Cook for 12 minutes, stirring occasionally. If it starts to dry out, add a little extra water.
  5. Once the orzo is cooked, stir in the Boursin cheese and lemon juice until thoroughly combined.
  6. Season to taste.
  7. Top with the crispy halloumi croutons.
  8. Serve immediately.
