Creamy Courgette Orzo with Halloumi Croutons

Ingredients
- 1 courgette cut into cubes
- 1 cup orzo (200g dried weight)
- 500ml boiling water
- 100g Boursin garlic and herb cheese
- Juice of half a lemon
- Salt and pepper to taste
- 100g halloumi cubed
- 1 tsp oil
Instructions
- In a large frying pan, fry the halloumi in a little oil until golden and crispy. Scoop out and set aside.
- In the same pan, add the courgette and sauté for a few minutes on high until starting to colour.
- Add the orzo and 500ml boiling water to the pan with the courgette. Turn the heat down to low.
- Cook for 12 minutes, stirring occasionally. If it starts to dry out, add a little extra water.
- Once the orzo is cooked, stir in the Boursin cheese and lemon juice until thoroughly combined.
- Season to taste.
- Top with the crispy halloumi croutons.
- Serve immediately.
