Crispy Roast Potatoes

Ingredients
- 2 lbs Russet potatoes
- 1 tsp Garlic powder
- 1/2 tsp Black pepper, freshly ground
- 1 tbsp Cornmeal or semolina
- 1/2 tsp Paprika, smoked
- 1 tsp Sea salt
- 3 tbsp Olive oil
- Water
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the potatoes. Cut them into 1-inch cubes.
- Place the potato cubes in a large pot and cover with cold water. Add 1 tsp sea salt.
- Bring to a boil and cook for 10-12 minutes, until the edges are soft.
- Drain the potatoes thoroughly. Return them to the pot and let them steam dry for a few minutes.
- Roughly shake the pot to rough up the edges of the potatoes.
- In a small bowl, mix together the olive oil, cornmeal (or semolina), garlic powder, smoked paprika, 1/2 tsp sea salt, and freshly ground black pepper.
- Pour the olive oil mixture over the potatoes and toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
- Toss with fresh parsley before serving.
