  2. Wash and peel the potatoes. Cut them into 1-inch cubes.
  3. Place the potato cubes in a large pot and cover with cold water. Add 1 tsp sea salt.
  4. Bring to a boil and cook for 10-12 minutes, until the edges are soft.
  5. Drain the potatoes thoroughly. Return them to the pot and let them steam dry for a few minutes.
  6. Roughly shake the pot to rough up the edges of the potatoes.
  7. In a small bowl, mix together the olive oil, cornmeal (or semolina), garlic powder, smoked paprika, 1/2 tsp sea salt, and freshly ground black pepper.
  8. Pour the olive oil mixture over the potatoes and toss to coat evenly.
  9. Spread the potatoes in a single layer on a baking sheet.
  10. Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
  11. Toss with fresh parsley before serving.
