Crispy Thai Chili Salmon Bites

Ingredients
- 1 lb salmon fillet, skin removed and cut into 1-inch cubes
- 1 cup crushed cornflakes (about 2 oz)
- 1 tablespoon Thai chili seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup cooked rice
- 1/2 cup sliced cucumber
- 1/4 cup thinly sliced red onion
- Thai chili sauce, for drizzling (optional)
Instructions
- Preheat air fryer to 400°F (200°C).
- In a medium bowl, combine crushed cornflakes, Thai chili seasoning, garlic powder, onion powder, salt, and pepper.
- Add salmon cubes to a separate bowl. Drizzle with olive oil and toss to coat.
- Add the seasoned salmon to the bowl with the cornflake mixture. Toss until evenly coated.
- Place salmon bites in a single layer in the air fryer basket. Do not overcrowd.
- Air fry for 8-10 minutes, or until golden brown and cooked through.
- Serve salmon bites with cooked rice, sliced cucumber, red onion, and Thai chili sauce, if desired.
