- 1/8 teaspoon black pepper
- 1/4 cup diced celery (optional)
- 1/4 cup diced red onion (optional)
- 1/4 cup dried cranberries or raisins (optional)
- Wheat crackers (like Wheat Thins)
- Green apple, sliced
- Lemon juice (for apple slices)
Instructions
- In a bowl, combine the cooked chicken, mayonnaise, yogurt, lemon juice, curry powder, salt, and pepper. Mix well.
- Stir in the diced celery, red onion, and dried cranberries or raisins, if using.
- If packing for meal prep, divide the chicken salad among meal prep containers.
- Add a portion of wheat crackers and sliced green apple to each container. Toss apple slices with a little lemon juice to prevent browning.
