Delicious Mac and Cheese
Description: A highly requested and delicious mac and cheese recipe.
Ingredients
- 1 pack of macaroni pasta
- 3/4 packet mature cheddar (550g pack)
- 1 pack double Gloucester
- 3/4 packet Red Leicester
- 2 mozzarella balls
- 1/2 tbs garlic granules
- 1/4 tbs ground white pepper
- 1/8 tbs smoked paprika
- 1/2 tbs mixed herbs
- 1 tbs onion granules
- 1 chicken bouillon
- 3 tbs butter
- 1/2 of the seasoning mix
- 3 cloves garlic
- 2 heaped tbs plain flour
- 1 can evaporated milk
- 600ml double cream
- 1/4 tbs wholegrain mustard/dijon
- Parsley
- Naga salt
- Coarse black pepper
Instructions
- Cook the macaroni pasta according to package directions.
- While the pasta is cooking, prepare the cheese blend by grating or cubing the cheddar, double Gloucester, and Red Leicester. Prepare the mozzarella balls.
- In a separate bowl, combine all the ingredients for the seasoning mix.
- In a large saucepan or pot, melt the butter over medium heat.
- Add the minced garlic and sauté for about a minute until fragrant.
- Stir in the plain flour and cook for 1-2 minutes, stirring constantly, to form a roux.
- Gradually whisk in the evaporated milk and double cream until smooth.
- Bring the sauce to a simmer, stirring occasionally, until it thickens.
- Reduce the heat to low and stir in the cheese blend until melted and smooth.
- Add half of the prepared seasoning mix and the wholegrain mustard/dijon to the cheese sauce. Stir well.
- Once the pasta is cooked, drain it and add it to the cheese sauce. Stir to combine.
- Season with naga salt and coarse black pepper to taste.
- Serve hot, garnished with fresh parsley.
