  1. Cook the macaroni pasta according to package directions.
  2. While the pasta is cooking, prepare the cheese blend by grating or cubing the cheddar, double Gloucester, and Red Leicester. Prepare the mozzarella balls.
  3. In a separate bowl, combine all the ingredients for the seasoning mix.
  4. In a large saucepan or pot, melt the butter over medium heat.
  5. Add the minced garlic and sauté for about a minute until fragrant.
  6. Stir in the plain flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  7. Gradually whisk in the evaporated milk and double cream until smooth.
  8. Bring the sauce to a simmer, stirring occasionally, until it thickens.
  9. Reduce the heat to low and stir in the cheese blend until melted and smooth.
  10. Add half of the prepared seasoning mix and the wholegrain mustard/dijon to the cheese sauce. Stir well.
  11. Once the pasta is cooked, drain it and add it to the cheese sauce. Stir to combine.
  12. Season with naga salt and coarse black pepper to taste.
  13. Serve hot, garnished with fresh parsley.
