Ingredients
- 1 head cauliflower
- 22g parmesan cheese
- 22g pecorino cheese
- 3 cloves garlic
- 1/2 cup skim milk
- 1 chicken breast
- Salt
- Black pepper
- 1 pound fettuccine
- Salt
Instructions
- Cut cauliflower into florets.
- Boil cauliflower until very tender.
- Add cauliflower to a blender with parmesan, pecorino, garlic, and skim milk. Blend until smooth.
- Season chicken breast with salt and pepper.
- Sear chicken breast in a pan.
- Boil fettuccine.
- Combine pasta with cauliflower puree and toss to coat.
- Serve pasta topped with sliced chicken breast and grated parmesan cheese.
