  1. Cut cauliflower into florets.
  2. Boil cauliflower until very tender.
  3. Add cauliflower to a blender with parmesan, pecorino, garlic, and skim milk. Blend until smooth.
  4. Season chicken breast with salt and pepper.
  5. Sear chicken breast in a pan.
  6. Boil fettuccine.
  7. Combine pasta with cauliflower puree and toss to coat.
  8. Serve pasta topped with sliced chicken breast and grated parmesan cheese.
