Easy Banana Flapjacks
Description: Easy, family favourite banana flapjacks made from scratch with no UPFs. These are a great option for kids' lunchboxes or a healthy snack. They store well for 3-4 days in an airtight container.
Ingredients
- 2 ripe bananas
- 80g stoned dates
- 1 big handful of raisins
- 1 heaped tbsp honey
- 1 tbsp tahini
- 1 tbsp sunflower seed butter (or any nut butter, mindful of school policy)
- 150g oats
- 100g milled flaxseed
- 1 tsp baking powder
- Big pinch of salt (optional)
- 80g melted butter
Instructions
- Blend bananas, dates, raisins, honey, tahini & sunflower seed butter.
- Mix oats, flaxseed, baking powder & salt in a mixing bowl.
- Add the blended banana mixture and melted butter to the dry ingredients. Mix well.
- Pour the mixture into a lined 18 x 18 cm tin.
- Bake at 180C / 160C fan until slightly firm to touch and crisp at the edges (around 25 minutes).
- Remove from oven and cut into portions while still warm.
- Cool completely before removing from the tin.
