Easy Biscoff Cheesecake Bars
Description: Easy no-bake Biscoff cheesecake bars with a biscuit base and a creamy Biscoff filling, topped with more Biscoff spread and crumbs.
Ingredients
- 220g Lotus biscuits
- 60g unsalted butter, melted
- 500g cream cheese, room temp
- 150g Biscoff spread
- 100g icing sugar
- 200g Biscoff spread, melted
Instructions
- Crush the Lotus biscuits finely. Set aside 2 tbsp of the crumbs.
- Mix the remaining biscuit crumbs with melted butter until combined.
- Press the mixture firmly into a baking tray lined with parchment paper.
- In a separate bowl, whisk together cream cheese, Biscoff spread, and icing sugar until combined.
- Pour the cream cheese mixture over the biscuit base and smooth it out.
- Pour over the melted Biscoff spread and smooth it out.
- Sprinkle with the remaining biscuit crumbs around the edge and place a biscuit in the middle.
- Refrigerate for at least 3 hours, or until set.
- Slice into squares and enjoy!
