  1. Crush the Lotus biscuits finely. Set aside 2 tbsp of the crumbs.
  2. Mix the remaining biscuit crumbs with melted butter until combined.
  3. Press the mixture firmly into a baking tray lined with parchment paper.
  4. In a separate bowl, whisk together cream cheese, Biscoff spread, and icing sugar until combined.
  5. Pour the cream cheese mixture over the biscuit base and smooth it out.
  6. Pour over the melted Biscoff spread and smooth it out.
  7. Sprinkle with the remaining biscuit crumbs around the edge and place a biscuit in the middle.
  8. Refrigerate for at least 3 hours, or until set.
  9. Slice into squares and enjoy!
