Easy Breakfast Casserole Recipe

Ingredients
- 1 pound sage pork sausage
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1/2 cup chopped onion
- 6 eggs
- 1 cup whole milk
- Salt and pepper to taste
- 1 cup shredded cheese
- 1/2 cup crushed crispy fried onions
Instructions
- Brown the sausage in a non-stick pan over medium heat.
- Add the diced green bell pepper, red bell pepper, and chopped onion to the pan with the sausage. Cook for several minutes until the peppers are softened.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Grease a 9x13 inch baking dish.
- Spread half of the hash browns on the bottom of the baking dish.
- Top the hash browns with the sausage and pepper mixture.
- Sprinkle half of the shredded cheese over the sausage mixture.
- Repeat with the remaining hash browns and cheese.
- Pour the egg mixture evenly over the top of the casserole.
- Use a fork to gently push down any ingredients that are sticking out of the egg mixture.
- Cover the casserole with plastic wrap and place it in the refrigerator overnight.
- The next morning, remove the plastic wrap and let the casserole sit out for 20-30 minutes before baking.
- Bake at 350°F (175°C) for 40 minutes, or until the eggs are set and the top is golden brown.
- Cover with foil for the last 10 minutes of baking if the top is browning too quickly.
- Let the casserole sit for a few minutes before serving.
