Instructions
- Preheat oven to 200°C.
- In a bowl, combine 200g flour, 320g water, 1 teaspoon salt, and 3 tablespoons olive oil.
- Mix until a smooth batter forms. You can use a stand mixer or mix by hand.
- Peel 400g of potatoes and slice them very thinly, using a mandoline or a sharp knife.
- Add the potato slices to the batter and mix to coat them evenly.
- Pour the mixture onto a baking sheet lined with parchment paper.
- Spread the mixture evenly to create a thin layer.
- Sprinkle grated cheese generously over the top.
- Add herbs like oregano and a drizzle of olive oil.
- Bake for 45-50 minutes at 200°C, or until golden brown and crispy.
- Let it cool slightly before slicing and serving.
