  1. Preheat oven to 200°C.
  2. In a bowl, combine 200g flour, 320g water, 1 teaspoon salt, and 3 tablespoons olive oil.
  3. Mix until a smooth batter forms. You can use a stand mixer or mix by hand.
  4. Peel 400g of potatoes and slice them very thinly, using a mandoline or a sharp knife.
  5. Add the potato slices to the batter and mix to coat them evenly.
  6. Pour the mixture onto a baking sheet lined with parchment paper.
  7. Spread the mixture evenly to create a thin layer.
  8. Sprinkle grated cheese generously over the top.
  9. Add herbs like oregano and a drizzle of olive oil.
  10. Bake for 45-50 minutes at 200°C, or until golden brown and crispy.
  11. Let it cool slightly before slicing and serving.
