Easy Spinach and Feta Rolls

  1. Preheat oven to 180C.
  2. Sauté onion for a few minutes.
  3. Add frozen spinach and 1/4 cup of water to the onion. Cook until spinach is soft and water has evaporated.
  4. Let the spinach mixture cool down.
  5. Crumble feta cheese, mix with grated mozzarella and egg white. Add the cooled spinach mixture and combine.
  6. In a separate small bowl, mix egg yolk with 1 tsp milk for brushing.
  7. Slice the puff pastry sheet lengthwise in half.
  8. Divide the filling into two portions.
  9. Spread one portion of filling onto one half of the pastry, about an inch from the edge.
  10. Roll the pastry over the filling to create a log, tucking in any escaping filling.
  11. Roll the pastry completely over so the seam is at the bottom.
  12. Shape into a cylinder. Cut the log in half, then cut each half into 2 pieces, creating 4 rolls.
  13. Repeat with the other half of the pastry and the remaining filling.
  14. Place the rolls in a baking dish lined with parchment paper.
  15. Brush the rolls with the egg yolk and milk mixture, ensuring it goes down the sides.
  16. Bake on a low oven shelf for 32-35 minutes until golden, flakey, and crispy.
