Easy Spinach and Feta Rolls
Description: Easy Spinach and Feta Rolls made with puff pastry. Makes 8 rolls.
Ingredients
- 1 x sheet puff pastry
- 1 x onion chopped
- 175g frozen spinach
- 1/2 tsp oregano or mint
- Pinch Salt and pepper
- 200g Feta cheese
- 60g Mozzarella
- 1 x egg white (mixed into filling)
- 1 x egg yolk
- 1 x tsp milk
- Sesame seeds
Instructions
- Preheat oven to 180C.
- Sauté onion for a few minutes.
- Add frozen spinach and 1/4 cup of water to the onion. Cook until spinach is soft and water has evaporated.
- Let the spinach mixture cool down.
- Crumble feta cheese, mix with grated mozzarella and egg white. Add the cooled spinach mixture and combine.
- In a separate small bowl, mix egg yolk with 1 tsp milk for brushing.
- Slice the puff pastry sheet lengthwise in half.
- Divide the filling into two portions.
- Spread one portion of filling onto one half of the pastry, about an inch from the edge.
- Roll the pastry over the filling to create a log, tucking in any escaping filling.
- Roll the pastry completely over so the seam is at the bottom.
- Shape into a cylinder. Cut the log in half, then cut each half into 2 pieces, creating 4 rolls.
- Repeat with the other half of the pastry and the remaining filling.
- Place the rolls in a baking dish lined with parchment paper.
- Brush the rolls with the egg yolk and milk mixture, ensuring it goes down the sides.
- Bake on a low oven shelf for 32-35 minutes until golden, flakey, and crispy.
