Fajita Chicken Pasta

  1. Start by cutting 450 g (1lb) of chicken into small cubes.
  2. Season with salt and black pepper.
  3. Add two tablespoons of Fajita spice mix.
  4. Heat a pan over medium-high and add 1 tbsp olive oil.
  5. Cook the chicken for 5-7 minutes, tossing, until cooked through.
  6. Meanwhile, finely chop the onion.
  7. Add the onions and cook for 4 minutes until translucent.
  8. Slice or mince 2 garlic cloves.
  9. Add bell peppers to the pan.
  10. Mix well and leave to cook for a minute or two.
  11. Pour in 2 cups (450 ml) of chicken stock.
  12. Reduce the heat to low.
  13. Let the pasta cook until it's almost done and the sauce has slightly thickened.
  14. Stir in 1 1/2 cups (160 g) of grated cheese until melted and smooth.
  15. Return the chicken to the pan.
  16. Garnish with finely chopped cilantro or parsley.
