Fajita Chicken Pasta

Ingredients
- 450 g chicken
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 250 g campanelle pasta
- 1 tbsp butter
- 2 cloves garlic
- 450 ml chicken stock
- 160 g grated cheese
- parsley
Instructions
- Start by cutting 450 g (1lb) of chicken into small cubes.
- Season with salt and black pepper.
- Add two tablespoons of Fajita spice mix.
- Heat a pan over medium-high and add 1 tbsp olive oil.
- Cook the chicken for 5-7 minutes, tossing, until cooked through.
- Meanwhile, finely chop the onion.
- Add the onions and cook for 4 minutes until translucent.
- Slice or mince 2 garlic cloves.
- Add bell peppers to the pan.
- Mix well and leave to cook for a minute or two.
- Pour in 2 cups (450 ml) of chicken stock.
- Reduce the heat to low.
- Let the pasta cook until it's almost done and the sauce has slightly thickened.
- Stir in 1 1/2 cups (160 g) of grated cheese until melted and smooth.
- Return the chicken to the pan.
- Garnish with finely chopped cilantro or parsley.
