Farmer's Casserole

Ingredients
- 2 cups diced potatoes, cooked
- 1 cup Colby & Monterey Jack blend shredded cheese
- 1/4 cup chopped green onions
- 1 cup cooked diced Canadian bacon
- 4 oz egg beaters
- 1/2 cup fat-free evaporated milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups diced potatoes, cooked
- 1.5 cups Colby & Monterey Jack blend shredded cheese
- 1/2 cup chopped green onions
- 1 cup cooked diced Canadian bacon
- 6 oz egg beaters
- 1 cup fat-free evaporated milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a greased 8x8 inch baking dish, layer the diced potatoes, shredded cheese, green onions, and Canadian bacon.
- In a separate bowl, whisk together the egg beaters, evaporated milk, salt, and pepper.
- Pour the egg mixture evenly over the ingredients in the baking dish.
- Bake for 40-45 minutes, or until set and golden brown.
- Let stand for 5 minutes before serving.
