Fluffy Babovka with Advocaat

Ingredients
- 5 eggs
- 150 g granulated sugar
- 1 vanilla bean
- 250 ml vegetable oil
- 250 ml advocaat (egg liqueur)
- 300 g semi-fine flour (Babiccina volba)
- 1 baking powder
- 2 tablespoons potato starch
- Pinch of salt
Instructions
- Preheat oven to 170°C (340°F) with top and bottom heat.
- Grease a babovka mold thoroughly with butter, ensuring all crevices and the central part are covered, then dust with flour.
- In a bowl, whisk eggs, sugar, and vanilla until thick and fluffy (about 5-7 minutes). A stand mixer can be used.
- Gradually pour in the advocaat and oil in a thin stream while continuing to whisk gently.
- In a separate bowl, mix flour, baking powder, salt, and starch. Gently fold the dry ingredients into the wet ingredients (do not overmix, to prevent the batter from collapsing).
- Pour the finished batter into the prepared mold.
- Bake for approximately 55 minutes. To check for doneness, insert a skewer into the babovka; if it comes out clean, it's ready. If it has batter, continue baking.
- Let the babovka cool in the mold for a while, then carefully invert it onto a wire rack to cool completely.
- Before serving, dust the babovka with powdered sugar.
