Fluffy Gluten-Free Pancakes

- 1 mug of gluten-free self-raising flour
- 1 mug of milk
- 1 free-range egg
- a pinch of salt
- a little olive oil
- a tiny bit of butter
- Sliced almonds
- Pistachios
- Rhubarb compote
- Honey
Instructions
- In a bowl, whisk together the flour, milk, and egg until smooth and thick.
- Add a pinch of salt.
- Heat a little olive oil and a tiny bit of butter in a non-stick frying pan over medium heat.
- Pour spoonfuls of the pancake batter into the hot pan.
- Cook for about 1.5 minutes on each side, or until golden brown and fluffy.
- Flip over and cook the other side.
- Add a little more butter to the pan and rub it over the pancakes to make them shine.
- Serve stacked with your favorite toppings, such as sliced almonds, pistachios, rhubarb compote, and honey.
