Fluffy Scones

Description: A brilliant scone recipe to get your kids in the kitchen cooking with you. Setting the table for a cream tea too. This recipe aims for the fluffiest of scones.

  1. Rub the cold butter into the self-raising flour until it forms fine breadcrumbs. Ensure there are no large butter pieces.
  2. Add the caster sugar and a pinch of salt to the flour mixture and mix.
  3. Whisk the egg and milk together.
  4. Make a well in the center of the dry ingredients and add about 3/4 of the egg and milk mixture. Mix gently to form a cohesive dough. Be careful not to overwork the dough. It should just come together.
  5. Flatten the dough with your hand to about 3cm high.
  6. Use the remaining 1/4 of the egg wash to brush the top of each scone round for a lovely sheen.
  7. Place the scones on a baking tray lined with greaseproof paper.
  8. Cook in a preheated oven at 200C fan on the middle rack for 12-13 minutes.
