Fluffy Scones
Description: A brilliant scone recipe to get your kids in the kitchen cooking with you. Setting the table for a cream tea too. This recipe aims for the fluffiest of scones.
Ingredients
- 450g self raising flour
- 120g cold butter, roughly chopped
- 40g caster sugar
- pinch of salt
- 1 egg
- 200mls milk
Instructions
- Rub the cold butter into the self-raising flour until it forms fine breadcrumbs. Ensure there are no large butter pieces.
- Add the caster sugar and a pinch of salt to the flour mixture and mix.
- Whisk the egg and milk together.
- Make a well in the center of the dry ingredients and add about 3/4 of the egg and milk mixture. Mix gently to form a cohesive dough. Be careful not to overwork the dough. It should just come together.
- Flatten the dough with your hand to about 3cm high.
- Use the remaining 1/4 of the egg wash to brush the top of each scone round for a lovely sheen.
- Place the scones on a baking tray lined with greaseproof paper.
- Cook in a preheated oven at 200C fan on the middle rack for 12-13 minutes.
