French Onion Soup

- 3 lbs onions
- 1/4 cup butter
- 2 tablespoons olive oil
- 5 cups beef broth
- 2 tablespoons sherry
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cloves garlic
- 1/2 cup Gruyere cheese
- 1 batard
- 1/4 cup butter
- 2 tablespoons olive oil
- 4 cups Gruyere cheese
Instructions
- Slice the onions thinly.
- Melt butter and olive oil in a large skillet over medium heat.
- Add sliced onions to the skillet, season with salt and pepper.
- Cook, stirring occasionally, until onions are softened and caramelized, about 25-30 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in beef broth and sherry, bring to a simmer, and cook for 15-20 minutes.
- Meanwhile, slice the bread into 1-inch thick slices.
- Toast the bread slices in the oven at 350 degrees Fahrenheit for about 10 minutes.
- Ladle soup into oven-safe bowls.
- Top with toasted bread slices.
- Cover generously with shredded Gruyere cheese.
- Broil until cheese is melted and bubbly.
- Serve immediately.
