  1. Slice the onions thinly.
  2. Melt butter and olive oil in a large skillet over medium heat.
  3. Add sliced onions to the skillet, season with salt and pepper.
  4. Cook, stirring occasionally, until onions are softened and caramelized, about 25-30 minutes.
  5. Add garlic and cook for another minute until fragrant.
  6. Pour in beef broth and sherry, bring to a simmer, and cook for 15-20 minutes.
  7. Meanwhile, slice the bread into 1-inch thick slices.
  8. Toast the bread slices in the oven at 350 degrees Fahrenheit for about 10 minutes.
  9. Ladle soup into oven-safe bowls.
  10. Top with toasted bread slices.
  11. Cover generously with shredded Gruyere cheese.
  12. Broil until cheese is melted and bubbly.
  13. Serve immediately.
