  1. Put a frying pan on a medium heat and add the butter.
  2. Add the leeks and fry for 5 minutes.
  3. Mix in the cumin.
  4. Add the spinach and let it wilt down.
  5. Throw in the lentils, mix them through, and bring the heat of the mix up.
  6. Make three small holes and add the eggs. Then scatter on the feta and squeeze on the lemon.
  7. Add any seasoning you want, then put a lid on for 5 minutes until the tops of the yolks go cloudy white.
  8. Enjoy while hot! The key is really not to overcook the eggs. If you watch the video you'll see my yolks were still runny. I make this for friends a lot! If you've never had a Shakshuka before I envy you! Just go get the stuff and make it. And buy good eggs.
