Fried Leeks with Eggs
Description: Fried Leeks with Eggs is a glorious weekend favorite and superb weight loss food. This recipe is inspired by Shakshuka.
Ingredients
- 5g butter
- 200g leeks
- 1 tsp cumin
- 100g spinach
- 100g lentils (tinned)
- 3 medium eggs
- 30g reduced fat feta
- Lemon juice
Instructions
- Put a frying pan on a medium heat and add the butter.
- Add the leeks and fry for 5 minutes.
- Mix in the cumin.
- Add the spinach and let it wilt down.
- Throw in the lentils, mix them through, and bring the heat of the mix up.
- Make three small holes and add the eggs. Then scatter on the feta and squeeze on the lemon.
- Add any seasoning you want, then put a lid on for 5 minutes until the tops of the yolks go cloudy white.
- Enjoy while hot! The key is really not to overcook the eggs. If you watch the video you'll see my yolks were still runny. I make this for friends a lot! If you've never had a Shakshuka before I envy you! Just go get the stuff and make it. And buy good eggs.
