Gooey Lemon White Chocolate Chip Cookies

  1. Mix your sugars with the lemon zest until fragrant.
  2. Add your cold cubed butter and mix until just smooth (do not cream).
  3. Add eggs, vanilla, and lemon extract. Mix until combined.
  4. Combine dry ingredients.
  5. Add dry ingredients to wet ingredients, mixing until just barely combined.
  6. Add white chocolate chips.
  7. Portion dough into 6oz balls (this will make approximately 8 cookies).
  8. Freeze the cookie balls overnight.
  9. Bake at 350°F (175°C) for 16-20 minutes, until golden brown on the outside.
  10. Let rest for 20-30 minutes before eating.
