Gooey Lemon White Chocolate Chip Cookies
Description: Crispy outside, gooey middle lemon cookies with white chocolate chips. This recipe makes 8 cookies.
Ingredients
- 405g (3 1/4 cup) all purpose flour
- 8g (2 tsp) baking powder
- 3g (1/2 tsp) salt
- 6g (1 tsp) baking soda
- 4g (1/2 tsp) cornstarch
- 227g (2 sticks) cold butter, cubed
- 200g (1 cup) brown sugar
- 120g (3/4 cup) white sugar
- zest of 2 lemons
- 2 egg yolks
- 1 whole egg
- 1 tsp vanilla
- 1/2 tsp lemon extract
- 12 oz white chocolate chips
Instructions
- Mix your sugars with the lemon zest until fragrant.
- Add your cold cubed butter and mix until just smooth (do not cream).
- Add eggs, vanilla, and lemon extract. Mix until combined.
- Combine dry ingredients.
- Add dry ingredients to wet ingredients, mixing until just barely combined.
- Add white chocolate chips.
- Portion dough into 6oz balls (this will make approximately 8 cookies).
- Freeze the cookie balls overnight.
- Bake at 350°F (175°C) for 16-20 minutes, until golden brown on the outside.
- Let rest for 20-30 minutes before eating.
