Gordon's Butter Chicken in a Hurry

  1. Cut the chicken into equal size pieces.
  2. Trim off any excess fat from the chicken.
  3. Put the chicken into a bowl.
  4. Add salt, black pepper, turmeric, cumin, coriander, cayenne, and garam masala to the chicken.
  5. Add 3 tablespoons of yogurt to the chicken.
  6. Add grapeseed oil to the chicken.
  7. Mix everything together to marinate the chicken.
  8. Dice one red onion.
  9. Chop the ginger.
  10. Slice the fresno chili.
  11. Mince the garlic.
  12. Heat some grapeseed oil in a pan over medium-high heat.
  13. Add the onions, ginger, chili, and garlic to the pan.
  14. Cook until softened, about 3-4 minutes.
  15. Add the spices: turmeric, cumin, coriander, cayenne, and garam masala.
  16. Toast the spices for 1 minute, stirring constantly.
  17. Add the tomato sauce to the pan.
  18. Stir and cook for 2-3 minutes.
  19. Add the heavy cream to the pan.
  20. Stir and bring to a simmer.
  21. Add the butter to the sauce and stir until melted.
  22. Add the marinated chicken to the pan.
  23. Cook, stirring occasionally, until the chicken is cooked through and the sauce is thickened.
  24. Season with salt and pepper to taste.
  25. Garnish with fresh cilantro.
