Gordon's Butter Chicken in a Hurry

- Yogurt
- Grapeseed oil
- Butter
- Red onion

- Tomato sauce
- Heavy cream
- Lemon

Instructions
- Cut the chicken into equal size pieces.
- Trim off any excess fat from the chicken.
- Put the chicken into a bowl.
- Add salt, black pepper, turmeric, cumin, coriander, cayenne, and garam masala to the chicken.
- Add 3 tablespoons of yogurt to the chicken.
- Add grapeseed oil to the chicken.
- Mix everything together to marinate the chicken.
- Dice one red onion.
- Chop the ginger.
- Slice the fresno chili.
- Mince the garlic.
- Heat some grapeseed oil in a pan over medium-high heat.
- Add the onions, ginger, chili, and garlic to the pan.
- Cook until softened, about 3-4 minutes.
- Add the spices: turmeric, cumin, coriander, cayenne, and garam masala.
- Toast the spices for 1 minute, stirring constantly.
- Add the tomato sauce to the pan.
- Stir and cook for 2-3 minutes.
- Add the heavy cream to the pan.
- Stir and bring to a simmer.
- Add the butter to the sauce and stir until melted.
- Add the marinated chicken to the pan.
- Cook, stirring occasionally, until the chicken is cooked through and the sauce is thickened.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro.
