Green Goddess Salad
Description: If there’s one salad that’s perfect for summer, it’s the Green Goddess. It’s fresh, healthy, zesty, and packed with herbs and great textures. This was one of the most popular recipes at a restaurant I used to work at—we could barely keep up with the orders each night. The secret is in the delicious dressing! Made with avocados and a blend of herbs, it’s light, creamy, and flavorful + perfect on just about anything.
Ingredients
- 1/2 head cabbage, cubed
- 3 cups arugula
- 1 large cucumber, diced
- 1/4 cup basil leaves
- 1.5 lemons, juiced
- 1 avocado
- 1/2 cup avocado oil
- 1/4 to 1/2 cup water for blending
- 1/4 cup green onions, thinly sliced
- 1/4 cup dill
- 1 cup basil leaves
- 2 garlic cloves, minced
- salt and pepper to taste
Instructions
- Add the salad ingredients to a large salad bowl and mix.
- For the dressing, add everything to a blender or immersion blender and blend until smooth. Add water as needed to blend, it should be thick and creamy. Taste for seasoning and add more salt and pepper as needed.
- Mix the dressing into the salad and serve!
