Hash Brown Breakfast Casserole

Ingredients
- 1 pound ground sausage
- 1/2 cup diced red bell pepper
- 2 cups shredded hash browns
- 1 cup chopped spinach
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook ground sausage in a skillet over medium-high heat until browned. Drain off excess fat.
- Add diced red bell pepper to the skillet with the sausage and cook for 2-3 minutes, until slightly softened.
- In a large bowl, combine the cooked sausage and pepper mixture with shredded hash browns, chopped spinach, and shredded cheddar cheese.
- In a separate bowl, whisk together eggs, milk, salt, and black pepper.
- Pour the egg mixture over the sausage and hash brown mixture and stir to combine everything evenly.
- Grease a casserole dish.
- Pour the mixture into the prepared casserole dish and spread evenly.
- Bake in a preheated oven at 350°F (175°C) for 40-50 minutes, or until the casserole is set and golden brown on top.
- Let stand for a few minutes before serving.
- Garnish with chopped green onions, if desired.
