  1. Cook ground sausage in a skillet over medium-high heat until browned. Drain off excess fat.
  2. Add diced red bell pepper to the skillet with the sausage and cook for 2-3 minutes, until slightly softened.
  3. In a large bowl, combine the cooked sausage and pepper mixture with shredded hash browns, chopped spinach, and shredded cheddar cheese.
  4. In a separate bowl, whisk together eggs, milk, salt, and black pepper.
  5. Pour the egg mixture over the sausage and hash brown mixture and stir to combine everything evenly.
  6. Grease a casserole dish.
  7. Pour the mixture into the prepared casserole dish and spread evenly.
  8. Bake in a preheated oven at 350°F (175°C) for 40-50 minutes, or until the casserole is set and golden brown on top.
  9. Let stand for a few minutes before serving.
  10. Garnish with chopped green onions, if desired.
