Healthy South African Crunchie
Description: HEALTHY SOUTH AFRICAN CRUNCHIE RECIPE. This recipe is a MUST bake and is perfect for any lunchbox! They are also really quick and easy to make.
Ingredients
- 1 1/2 cup rolled oats
- 3/4 cup coconut
- 1/2 cup coconut flour
- 1 serving protein powder (optional)
- 1/4 cup mixed seeds or chopped nuts (optional)
- 2/3 cup erythritol or granulated sugar of choice
- 1/2 cup honey
- 1/2 cup Flora light margarine
- 1 TBS vanilla essence
- 1/3 cup boiling water
- 1 tsp bicarb
Instructions
- Preheat oven to 180 degrees and spray a baking tray with some cooking spray or line with some foil. Set aside.
- Add the rolled oats to a food processor and blend for about 10 seconds (You don’t want to make an oat flour but you do want some fine and some whole oats).
- Pour the oats into a bowl and then add the coconut, coconut flour and optional protein powder. Mix together and set aside.
- In a pot, on the stove, gently melt the Flora, honey, erythritol/granulated sugar together.
- When the Flora has melted and small bubbles start to appear, add the boiling water followed by the bicarb. Stir together until the mixture is nice and ‘frothy’.
- Pour this mixture into the oat mixture and stir until all of the dry mixture has been coated in the Flora mixture.
- Add your optional add in’s and mix until evenly dispersed.
- Spoon into the prepared baking tray, making sure to pack the mixture tightly together.
- Bake for 25 to 30 minutes or until golden brown.
- Take out of the oven and cut into slices.
- Turn the oven off and return to the oven to ‘dry out’ for a further 10 to 15 minutes.
- The crunchies will harden fully once they have cooled.
