Ingredients

Instructions
- Soak dried chiles in hot water until soft.
- Blend soaked chiles with a little water until smooth, then strain to create enchilada sauce.
- Weigh out portions of shredded chicken for filling the enchiladas.
- Heat corn tortillas on a griddle, dipping them briefly in the enchilada sauce to soften.
- Fill each tortilla with chicken, roll it up, and place it in a baking dish.
- Repeat for all tortillas.
- Top enchiladas with more sauce and cheese.
- Bake until cheese is melted and bubbly.
- Portion shredded lettuce, diced tomatoes, and diced onions into separate containers.
- Portion shredded cheese into small containers.
