  2. Blend soaked chiles with a little water until smooth, then strain to create enchilada sauce.
  3. Weigh out portions of shredded chicken for filling the enchiladas.
  4. Heat corn tortillas on a griddle, dipping them briefly in the enchilada sauce to soften.
  5. Fill each tortilla with chicken, roll it up, and place it in a baking dish.
  6. Repeat for all tortillas.
  7. Top enchiladas with more sauce and cheese.
  8. Bake until cheese is melted and bubbly.
  9. Portion shredded lettuce, diced tomatoes, and diced onions into separate containers.
  10. Portion shredded cheese into small containers.
  11. Portion salsa verde into small containers.
  12. Assemble meal prep containers with enchiladas and sides.
