High Protein Chicken with Chickpea Mango Salad
Description: High protein chicken thigh fillet with chickpea and mango salad, served with brown rice.
Ingredients
- 800g Chicken Thigh Fillet
- 1 Tbsp Paprika
- 1 Tsp Cayenne Pepper
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Fresh Lime
- 1 Tbsp Tomato Paste
- 2 Tbsp Greek Yoghurt
- 2 Tbsp Olive Oil
- 240g Chickpeas
- 1 Red Pepper
- 1/2 Red Onion
- 1 Fresh Lime
- 1 Small Mango
- Few Sprigs of Parsley
- 200g Uncooked Brown Rice
Instructions
- Air fryer: 200°C for 14–16 mins, turning halfway.
- Oven: 220°C (fan) for 22–25 mins, flipping once.
